Wedding Cake 101 : How to make a wedding cake

Wow! This is my first post for the year 2010. So how did your 2009 year end? Mine was a mixture of exhaustion, fulfillment, blessings, and joy=)

Since my 2009 was so blessed by God with parties and events, I'd like to start my blog for this year by sharing how I made my first wedding cake and cupcakes for a client turned good friend named Melissa. Before I discuss the details of her wedding cake, let me tell you that this lady was the one who inspired and encouraged me to include pastries on my existing chocolate fountain business.

She first contacted me around Feb 09 to inquire about the chocolate fountain since she wanted to have this on her dream wedding in December 2009 at Pangasinan. But she also asked me if i could provide her cupcakes because she couldn't find a cupcake tower supplier in that area. Since I
mentioned that I have been baking for my family since I was a kid, she persuaded me to try out baking again so I could bake for her on her wedding. I was hesitant at first because I've never baked cakes with icing before!hahaha. To cut the story short, I gave it a shot. I bought some baking materials, bought a gas range, and started to bake since then.

Am so glad she trusted my skills and was able to encourage me to do what I have loved and enjoyed doing since my childhood days.=)

Here goes the cake story..

I made her 200pcs cupcakes in 6 yummy flavors!
Banana Cupcakes with Chocolate Cream Icing, Peanut Butter Cupcakes with Chocolate Cream Icing, Pink Velvet Cupcake with Chocolate Cream Icing, Choco Orange Cupcake with Pink Vanilla Cream Icing, Carrot Walnut Cupcake with Pink Vanilla Cream Icing, and Chocolate Almond Cupcake with Strawberry Cream Icing


Also made her one 6x5 round mini cake for the cake cutting ceremony. The mini cake had
two flavors. The top layer is a black and white cake and the bottom layer is a white chocolate cake=)

Here's my step by step procedure on how this wedding cake turned into a princess=)

1. I baked two batches of cake in a 6inch baking pan. Trimmed the cake and put them together using a whipped cream frosting. Then, I started adding the white buttercream dream icing from the top to the sides, leaving some area un-iced for the chocolate icing cover

2. Using a steel cake spatula, I flatted the icing. For best result, submerge the spatula on very hot water every time you flatten the icing. After I made the white icing look clean, I added the chocolate icing on the area of the cake where I left blank.

3. Since my cake have already been fully iced, I started the decorating part by carefully putting on the edible pink metallic candy beads. My tiny mistake, I should have added beads on top before I place the edible candy flowers..

4. Finally, add the edible candy flowers on top and on the sides=)

My Vanilla Choco Chip Cupcakes with White Chocolate Buttercream Icing!


I wanted to try my new cupcake liners and the other baking equipments I got from Wilton's and Ateco last Saturday so I decided to bake these yummy cupcakes for my girls.


For the lavender white chocolate icing, I simply mixed my sky blue and burgundy wine gel food coloring from Chef Master. So glad I got the color I wanted because this lavender and pink (using a touch of burgundy wine) one will be Missy's cupcake icing colors for her coming birthday celebration on Aug 9.

I used ChefMaster's leaf green color and one of Ateco's leaf icing tip for the leaves i decorated on top of the cake. Also, I added edible silver beads to enhance the look. It really looks like a nice wedding cupcake..=)

Music of the Heart Cupcake

I got this new cooking range from La Germania because I really want to focus on this biz and let others taste my yummy baked cakes and brownies=).

This cooking range's first client and also my first non-family related client is one of my good friend and colleague at work. I took some shots from finish to end (kasi nga first client, kaya excited.hehehe). She ordered for what I'd call Music of the Heart themed cupcakes. Said it was for her family (pero I know better.. palusot lang un! "it's just her alibi" ) The flavor she picked was our Moist Chocolate Chiffon cupcake with Dark Chocolate Icing. Among my chocolate flavor variants, this is actually one of my best pick.

Thank You note for my client's Butterfly Themed wedding on December

I'm so proud of this finished project I made for my grandest wedding event this coming December. One of my soon-to-be wed client will be getting about 250-300 assorted cupcakes as favors for her coming wedding end of this year.

Through the help of Adobe Photoshop CS, I was able to come up with this lovely themed thank you note which I plan to put on each of her cupcake favor box.

So happy our clients loved it!

My Cupcakes, mini cupcakes, and mini cakes!

My Chocolate Heaven is now introducing cakes on its line of products! Especially baked by me of course=)

Just a small background on this hobby.. My passion for pastries and desserts actually started a long time ago. I start baking when I was on my third grade. My mom used to work for an international christian company (Campus Crusade for Christ in Baguio City). Composed of mostly American bosses (some or one Indian I think), receiving baked goodies on holidays like Easter, Thanksgiving, Halloween, and specially Christmas has already become a tradition for their employees. And since they always have a year to end garage sale, selling baking equipments and recipes are always a part of it. When my mom decided to buy some baking equipments and recipe books, I and my dad started to try out baking and from then on, my mom always complained about my baking schedule because i do it almost every weekend as a snack for the family. Trying all the yummy goodies like cakes, brownies, and cookies.. she definitely had to set a budget for me! Lol.

Since then, our birthday cakes were homemade by me.=) But that stopped when I married. My mom doesn't want to give up here baking stuff yet daw. hehehe.. Oh well, I was also focus on my family and my profession. And I still do baking occasionally naman so that didn't bother me at all.. Not until I started my chocolate dessert business and some clients are already asking if I could also do cakes for them. And so I though, why not go back to the hobby that I and my family enjoyed;) It also by the way won my hubby's and his family's heart and stomach anyways! lol

So there you go.. Now I'm back to my 1st loved hobby! And to showcase my baked goodies, I baked some cupcakes in three different flavors (chocolate mint, vanilla chocolate chip, and strawberries and cream) and a two-tiered mini cake(in moist chocolate chiffon) as a gift for my elder brother, his wife, and their soon to be baby during the baby shower I hosted last April 11.
